Table top bain maries can be used to keep food and sauces hot before service.  Table top bain maries  are usualy on a stand or table top. 

There are two main types; Dry and Wet. The dry well bain marie has a heating element close to the cooking pot whereas the wet wells have a water bath around the pots that provides heat. 

You can store food for up to two hours before service. 

The types of food typically kept hot are:- 

  • Gravy
  • Custard
  • Baked Beans
  • Soup
  • Mushy Peas
  • Hot Sauces such as Hollandaise and Beurre Blanc
