A versatile, light and well balanced knife. Great for intricate tasks and off-board work.

Our Petty knives – based on the Japanese utility knife – fill the gap between a full sized chef knife and a conventional paring knife. Great for peeling and other off-board cutting tasks as well as intricate jobs such as chopping herbs or even filleting fish. We leave our Petty knives with a slightly more robust grind meaning that with care they can also be used for light butchering tasks. Very useful to have on hand working alongside a larger chef knife.

Our take on the classic Japanese vegetable knife. The Nakiri is one of the more popular blades in our workshop. The flat edge profile makes it easy to apply a precise, very fine grind and they are particularly easy to sharpen. In addition to being great fun to make, they are also great to use. The deep flat blade makes them perfect for fast, precise chopping of vegetables. We forge these blades thinner than our other knives as this helps them glide through hard vegetables without wedging.
