This outstanding harmony modular deck oven by MONO is perfect for baking an exquisite range of artisan breads and patisserie where a beautiful crust and outstanding sheen is essential. The oven is one of the most versatile deck ovens on the market today. Its modular design makes it ideally suited for installation in bakeries with limited access or those located in upper stories or basements, as each dismantled deck fits through a standard doorway to be built on site. Each deck features a heavy sole plate which is ideal for producing artisan and oven bottom bread.

This quality two pan four deck oven features independent controls for top and bottom elements, single-piece, heavy sole plates for evenly distributed bottom heat and can be fitted with a patented cumulus steam generating system. Baking multiple products time and time again is effortless with each deck separately controlled for complete flexibility. The decks have a generous 8” crown, rapid heat recovery rate which provides a gentle mellow bake each time whilst the thick slabs of insulation deliver exceptional heat retention. Additionally, the oven also features a 7 day timer and is capable of storing up to 240 bake programs by USB and has a viewing window on each deck which ensures you have full control over the baking process whilst the auto shut down facility and energy saving sleep mode reduces energy consumption and running costs.
